For their newest beer in their foeder lager series, Benchtop collaborated with Hashi Chow to do something quite unique. They made some delicious and rich amazake rice bread that Benchtop tossed in the mash that consisted of a pilsner base with a touch of Vienna malt and heavy dose of malted Carolina Gold Rice from Epiphany Craft Malt. They aged this beer in our lightly toasted oak foeder. The rice adds a wonderful richness and subtle nuttiness and the bread adds some rich umami flavors and rounds out the flavors. It then finishes nice and crisp.
